Day Three: Soft Homemade Caramels

My sister Rebecca first made these delicious, chewy caramels several years ago. Now we try to make them at least once a year. We enjoy the process of making them, but we also love eating them (of course!) and sharing them with friends and family. Sweet, creamy, and chewy all come together in a perfection of a confection!



1 cup butter

2 cups sugar

2 cups light corn syrup

2 cups whipping cream, divided

2 teaspoons vanilla

Combine butter, sugar, corn syrup and 1 cup whipping cream in a Dutch oven or a heavy 8 quart pan. Cook over low heat, stirring gently, until sugar dissolves. Cover and cook over medium heat for 2-3 minutes to wash down any sugar crystals from sides of pan. Uncover and cook, stirring occasionally, until candy thermometer registers 224 degrees F. Stir in remaining 1 cup cream. Continue to cook over medium heat until temperature is 248 degrees. (Watch it closely at this point; if you begin to see little dark spots in the caramel, remove it from heat immediately or it will burn.) Remove from heat and stir in vanilla. Pour into a buttered 13″x 9″ pan. Cool for about five hours. Cut into squares and wrap individually in wax paper. Makes 2  3/4 lbs.

If you have never made caramels before and are a bit hesitant, please give it a try! Just be sure that you know how to use your candy thermometer, and always be careful around hot buttery mixtures!


There are many different ways to wrap these pretty caramels (just search for ideas on the internet!!). We used parchment paper, but wax paper might work better. We tried decorating the paper with self-adhesive ribbon before realizing that it doesn’t stick. 🙂


We wrapped what seemed like hundreds of caramels yesterday afternoon!



To make this a perfect gift, I would place a handful of caramels in a clear plastic treat bag and tie it with a festive ribbon. Add a cute card, and you’re good to go!
