Beets are another beautiful vegetable that we are enjoying from our garden this summer! We like to eat them plain once they’re cooked. They’re so good, and they add a gorgeous splash of color to any meal when you use them as a side dish!
Sometimes Mom has made a chocolate beet cake using grated beets. The beets add moisture and just a hint of flavor. For anyone who has made a chocolate zucchini cake, it’s pretty much the same idea, just a different veggie! 🙂
This year, we girls wanted to make a beet cake, but we wanted to incorporate beets into the frosting, too! So we searched Pinterest until we found a recipe that we thought looked perfect. We will be doing a post all about that yummy cake next time, so be sure to check back tomorrow! 🙂
