Fresh from the garden: Red Onions

One of our favorite vegetables to grow in our garden every summer are red onions. The ones in the picture above aren’t as big as they could get, but we so badly wanted to pick some and use them in yummy food that we couldn’t let them grow any longer!!

And there are still a bunch out there, growing as fast as they can so they can attempt to satisfy our almost insatiable love of homegrown red onions! 🙂

Below is a list of some of our favorite ways to use red onions:

~ Slice them thinly and layer them into a tomato, pesto, and mozzarella grilled cheese sandwich.
~ Dice them and scatter them across a lovely homemade pizza!
~ Slice or dice them and add them to tomato soup for a bit more texture.
~ Cut them into small chunks and add them to a quiche or breakfast bake.

That last one is a special favorite of ours’. We have a delicious zucchini onion breakfast bake that we make often, and we will be sharing the recipe for that soon!
