Every week or so we spend a few hours freezing some of our last tomatoes. We put them in a heat-proof dish, pour boiling water over them to loosen the skins, and then peel the skins right off. Next we dice them and place them in freezer containers, label them, and throw ’em in the freezer. Later this fall we will pull them out and use them in soup or chili.
