This is Day Three in a 8 day series featuring pumpkins. Click here to start reading at the beginning of the series.
The other day we had our first snowfall! Just enough to cover the ground, really, but I think it counts! 😉 Because it was cold and just a bit dreary, I pulled out my favorite recipe for a homemade pumpkin latte. We live twenty minutes away from any decent coffee shop, so this is a great substitute for Starbucks! It’s so easy, and the results are amazing. Hold on a minute; I have to go make one right now.
Okay, I’m back. Now it’s your turn!
Pumpkin Pie Latte
2 cups milk
2 Tbsp. canned pumpkin
2 Tbsp. sugar
2 tsp. vanilla extract
1/2 tsp. pumpkin pie spice
1/2 cup hot strong coffee
Whipped cream, pumpkin pie spice, and cinnamon for garnish, optional
In a small saucepan, combine the milk, pumpkin, and sugar. Cook and stir over medium heat until steaming (almost boiling but not quite). Remove from the heat; stir in vanilla and pumpkin pie spice.Transfer to a blender; cover and process for 15 seconds or until foamy.
Pour into two mugs; add the coffee. Garnish with whipped cream and spices if desired. Yield: 2 servings.
