Last week, I made these moist biscuits, and, since I’m getting really excited about Valentine’s Day, I cut them all into hearts. Cute little darling hearts. 🙂
The raisins are what makes ’em….they get so plump and juicy!
Here’s the recipe!
Buttermilk Raisin Biscuits
4 cups flour
2 Tbsp. sugar
4 tsp. baking powder
2 tsp. salt
1/2 tsp. baking soda
1/2 cup shortening
1/2 cup raisins (I used a mix of golden, red, and black raisins)
1 1/2 cups buttermilk
1 cup powdered sugar
1/2 tsp. vanilla extract
1 Tbsp. milk
Combine dry ingredients. Cut in shortening until crumbly. Mix in raisins. Stir in buttermilk. Knead lightly 20-25 times, about 1/2 minute. Cut into 1/2 inch thick circles (or other shape) and place on ungreased baking sheet. Bake at 450 degrees F. for 10-12 minutes or until golden brown.
In small bowl, whisk together powdered sugar, vanilla extract, and enough milk to form desired consistency. Drizzle over warm biscuits. Serve warm. Yield: about 1 dozen.
