Our Mum makes the best lemon bars 😀 Yes, the best! Last week, Mummy made two pans of lemon bars for a party to celebrate our grandparent’s 60th wedding anniversary. Anyone who thought fast enough got a lemon bar on their first time through the food line…because by the time they’d have gotten around for seconds, the bars were gone. Everyone loves them!
Now, each of us girls have tried our hand at making lemon bars, but they never turn out as good as when mum makes them! When mum makes lemon bars, the crust is slightly chewy, and the filling is perfection. Before she cuts the bars, she cuts off the edges because they always seem to be harder; these are the pieces we all eat right away! Quality control, ya know 😀
Sunburst Lemon Bars
Mum’s friend Susan sent Mum a Pillsbury cookbook about twenty-eight years ago, and in that cookbook, Mum found the Sunburst Lemon Bars. They are legendary now. Here is the recipe, and savor the results!
2 cups flour
½ cup powdered sugar
1 cup butter, softened
½ quick oats (optional)
4 eggs, slightly beaten
2 cups granulated sugar
⅓ cup flour
1 teaspoon baking powder
¼ cup lemon juice
1 cup powdered sugar
2-3 Tablespoons lemon juice
Combine crust ingredients; mix until crumbly. At this point you can mix the oats in. Press into an ungreased 13x 9” pan and bake at 350° for 20-30 minutes. In large bowl, combine eggs, sugar, flour and baking powder. Beat until light, fluffy yellow. Stir in lemon juice. Pour over warm crust and return to oven for 25-30 minutes or until light golden brown. Cool completely. For glaze, combine powdered sugar and 2-3 Tablespoons lemon juice. Blend until smooth and of desired consistency. Drizzle over cooled bars.
