Day Two: Pumpkin Cheesecake Bars

Our brother Nate loves it when we girls or Mom make these pumpkin cheesecake bars. He will usually eat two or three of these in the space of a few minutes!

These rich bars combine two of the best flavors in the world: pumpkin and cheesecake! A thick, sweet crust provides a sturdy bottom for the cream cheese layer, which has just the right amount of sweetness and spice. We like to add a dollop of freshly whipped cream on top for a pretty garnish!

Pumpkin Cheesecake Bars

Crust:
1 package pound cake mix (approx. 16 oz.)
2 Tbsp. butter, melted
2 tsp. pumpkin pie spice
1 egg
Filling:
1 package (8 oz.) cream cheese, softened
1 can (14 oz.) sweetened condensed milk
2 tsp. pumpkin pie spice
1/2 tsp. salt
2 eggs
1 can (15 oz. or about 2 cups) canned pumpkin

Mix together crust ingredients until crumbly. Press into ungreased 13″x 9″ pan. Bake at 350 degrees F. for 10 minutes. In medium bowl, beat cream cheese until fluffy. Add milk, spices, eggs, and pumpkin. Mix thoroughly. Pour over the crust. Bake until filling is set, about 30-35 minutes. Refrigerate until completely chilled before serving. Yield: about 24 bars.
