Day Three: Homemade Pumpkin Latte

The other day we had our first snowfall! Just enough to cover the ground, really, but I think it counts! ­čśë Because it was cold and just a bit dreary, I pulled out my favorite recipe for a homemade pumpkin latte. We live twenty minutes away from any decent coffee shop, so this is a great substitute for Starbucks! It’s so easy, and the results are amazing. Hold on a minute; I have to go make one right now.


Okay, I’m back. Now it’s your turn!

Pumpkin Pie Latte

2 cups milk
2 Tbsp. canned pumpkin
2 Tbsp. sugar
2 tsp. vanilla extract
1/2 tsp. pumpkin pie spice
1/2 cup hot strong coffee
Whipped cream, pumpkin pie spice, and cinnamon for garnish, optional


In a small saucepan, combine the milk, pumpkin, and sugar. Cook and stir over medium heat until steaming (almost boiling but not quite). Remove from the heat; stir in vanilla and pumpkin pie spice.Transfer to a blender; cover and process for 15 seconds or until foamy.

Pour into two mugs; add the coffee. Garnish with whipped cream and spices if desired. Yield: 2 servings.
